It's fairly clear that Sage doesn't know about the prostitution. The rumour about HOTs paying their members' tuition is how the restaurant gets new girls. There is no free tuition, but there is an unofficial sex scholarship. The way Sage denies the free tuition rumours is a clear indication that she doesn't know what is really going on. And since it's also very clear her father is the one who fixes the books, it's quite natural for Sage to be out of the loop.
Some of the members take the HOT codes seriously and want it to be a real sorority. For others the codes are something they pretend to uphold. They want to get along and be friends with the other members, but they are not sisters in the sense Sage wants them to be.

Back in ep9 when planning the party, Quinn and Sage teased him about playing blindfolded. Maybe there will be something like that, DPС left that idea for later.
I don't know if it will be in event format on all the paths where your LIs tease you by making you guess whose boobs are whose, but maybe it will just be on Sage's path.
In fact, there isn't a single rough sex scene in the game. You can consider the scene with Jade as rough sex, but it's pretty vanilla done.

I've said this before, but my biggest problem with Sage's story and the restaurant is that Sage couldn't possibly not know what was going on in the room next to her.
In my opinion, there are three clues in the game that Sage was aware.
1) At the very beginning of the game while practicing with MC in the campus courtyard, she says something like “ you might not know about it until you pay attention”. A lot of people thought she was talking about Chad, but she's probably talking about Quinn.
2) She follows the sisterhood principle of “ don't attack sisters”. Also, she didn't accuse Mel and Sarah of cheating with her ex-boyfriend, although she clearly suspected it.
3) In ep9 she says the line that you should treat your enemies like a friend so he doesn't suspect anything. Maybe it's a simple spacey generic phrase that means nothing, or maybe she suspects Quinn but is faking it.
The fact that Sage doesn't know anything is very much discrediting Sage as a leader and character. And DPC himself knows this. She may suspect Quinn of dark deeds, and even know about them, but since she has no proof, she keeps quiet.
Many cite the Chad case as an example. I assume Sage and Chad had sex, although the game doesn't explicitly say so, but it was rare. And Sage's whole obsession with Chad came about when the sex disappeared and Sage logically assumed that her boyfriend had pussy on the side.

Actually it's made pretty clear Sage and Chad didn't have sex. "Isn't it about time you got more physical with me."
1 & 3) This could mean absolutely anything or nothing at all.
2) If you don't tell Sage that Chad is gay, She WILL accuse Mel and Sarah.
And why should Sage know about anything that happens in Quinn's room? Quinn doesn't let even Rio know everything. And how is the room even connected to Sage knowing about prostitution? The girls don't bring their customers to Quinn's room. If Quinn brings someone there to fuck why should Sage think it involves money?
Sage has no reason to think the girls fuck around for any other reason than being horny.
